Pursuing Food Safety and Processing

A talented food science doctoral student at 51AV A&M University is one of six 2022 Food Safety Fellows through the Oak Ridge Institute for Science and Education (ORISE).

Aaron Dudley, a Ph.D. student in the Department of Food and Animal Sciences in the College of Agricultural, Life and Natural Sciences will join fellows from Oklahoma State University, the University of Georgia, Pennsylvania State University, Tuskegee University and the University of Minnesota School of Public Health.

Dudley, advised by Dr. Mamadou Lamin Kassama, is pursuing a concentration in food safety and processing. He is researching the “Evaluation of Electrospun Hemp-Loaded Nano-fiber Coupled with Pulsed UV Light on the Safety of Raw Chicken Breast.” 

All selected fellows are current students who have shown interest in improving food safety and public health. The fellowship will allow collaboration with Food Safety and Inspection Service (FSIS) scientists, as well as real-time application of their scientific and technical knowledge as they contribute ideas toward the improvement of safety within the food supply chain.

This fellowship creates a significant “pipeline of highly qualified talent in disciplinary fields that support mission-critical areas” for federal agencies to satisfy present and future workforce needs in STEM areas.
